Welcome to the Flourless Fork!

I have a passion for creating (and eating) heavenly, healthy food for all people to enjoy, even those who have food sensitivities and allergies. I'm a full-time college student, so many of my recipes will be fast, easy to make and somewhat cheap. However, I love to experiment and try my hand at some trickier meals, so I'll share those with you too. 

I'm no expert in nutrition, but through my own experiences I've found that eating a mostly paleo diet (see Mark's Daily Apple) has transformed my overall health. 

I grew up eating "healthy" homemade meals and baked goods, including lots of pasta, bread, cookies and delicious cakes and pies. I played tennis throughout most of my childhood, which kept me in shape until my junior year of high school when I gave up competitive tennis for volleyball. My level of activity declined, while my appetite and diet remained constant, leading to gradual weight gain. When I suddenly realized I was putting on weight, food became an obsession. I spent hours, weeks and months at a time researching various diets, calorie recommendations, and exercise plans. But this new focus on food only led to more weight gain. 

A year into my college career I found out I was intolerant to gluten and dairy. I was constantly tired and plagued by chronic headaches. Once I completely eliminated gluten and dairy from my diet my energy returned, my headaches were gone, and I gradually started losing weight. I've since found that limiting my sugar intake has aided with weight loss and made me feel much healthier. 



I hope to inspire you with this blog to pursue a pain-free, energetic and vibrant life by mindfully fueling your body with satisfying whole foods.
